for some odd reason I feel this slight excitement, that I get to work on the new menu at work. I’m a food nerd, tell me to make something, I most likely will have a recipe from the top of my head, or cook it. It’s like chemistry, but you get to eat it. Seems like I get to enjoy getting paid for my hobby =]

monte a buerre - mounting butter on your sauce/reduction to add volume, flavor, and thickness. Seriously if this thing gets re heated again it will break! and you cannot save it. Too many people make this common mistake even cooks with “experience”. Don’t make extra to save time, fucking make that shit to order

Grilling meats, and par cooking it completely dries your damn protein. No arguement, cook that shit to order.

When I tell you to prep half a pan of this that yadda yadda, do not fill that shit up! why…The fucking shelf life…oh yeah FIFO too, don’t know what that is, get out of the kitchen.

Ofcourse the grill is hot, the fryer is hot, the oven is hot. If you can’t clean it cause its hot get off the line and be a server.

seems now that most cooks are just not real cooks; pride in place, and passion is what you need.
